Delicious Cream Cheese Chicken Enchiladas

A super scrumptious enchilada we discovered. My first time ever making this recipe only because I found this recipe off of The Blue House Blog. Melissa raved about how good this recipe was and boy was she right. Again, if you’re a cream cheese lover or love snacking on cream cheese periodically, this is for you. Anything with cream cheese is always tasty. In addition, using Heavy Whipping Cream is a plus. It adds a lot of creamy yet tasty flavor. I was beyond thrilled and was very well satisfied with this Cream Cheese Chicken Enchiladas. I also retrieved a quick Chicken Slow Cooker Recipe from Real Housemoms to add to the enchiladas. Both recipes were beyond amazing and easy.

 

To make the Enchiladas you will need the fun ingredients to make your dish complete!

Ingredients:

1 onion- diced

2 Tablespoons Olive Oil

8 oz Cream Cheese

4 Cups Shredded Cooked Chicken

1 Can Diced Green Chiles (4 oz)

1 Pint Heavy Whipping Cream

2 Cups Grated Tillamook Colby Jack Cheese

20 Flour Tortillas

 

Directions:

*Preheat oven to 350 degrees.

*Coat your pan with Olive Oil on medium heat. Once the oil has warmed up, toss in the onion and brown to your liking.

*Remove the pan from the heat once the onions have browned, add in the cream cheese, green chiles, and cooked chicken shreds.

* Use a large baking pan and line with foil (foil is optional)

*Grab a large spoon or ice cream scooper and lay a good dollop of chicken onto your tortilla (corn or flour or wheat) and roll up to your desired look.

  • Pour the Heavy Whipping Cream over the enchiladas, and smother them well!
  • Toss on the cups of shredded cheese over the enchiladas.
  • Cover the baking pan with foil
  • Bake for 25 minutes and you’re done!

 

Modify your ingredients accordingly to taste and use more or less tortillas and/or seasonings depending on how much chicken you make or would like to fill to make the enchiladas smaller or bigger in size. For the men, stuff those tortillas and you will have happy stomachs in the house!! This meal is cost friendly and super delish. I am so glad I found this recipe from The Blue House Blog. Enjoy this dish and you will be pleased!! Top it off with some homemade salsa
