DIY Chocolate Lovers Chocolate Truffle Cookies

Boy oh boy! This cookie is delicious especially if you are a chocolate lover. In the cookie you will also have chocolate chips savoring in your mouth. This recipe from allrecipes gives a slight chew and crunch. Every consistency may vary depending on how it’s baked and for how long it was placed in the oven.

Prep Time: 15 minutes

Bake Time: 10 minutes

Ready: 2 hours

Oven: 350 degrees

Ingredients:

4 (1 oz) squares unsweetened chocolate, chopped

1 cup semisweet chocolate chips

6 tablespoons butter

3 eggs

1 cup white sugar

1 ½ teaspoons vanilla extract

½ cup all-purpose flour

2 tablespoons unsweetened cocoa powder

¼ teaspoon baking powder

¼ teaspoon salt

1 cup semisweet chocolate chips

 

Directions:

-Microwave option: In a microwave-safe dish, warm, up the unsweetened chocolate, 1 cup of the chocolate chips and butter into the bowl.

-Stove top option (This method was used for my recipe): Use a pot, fill with water and place a bowl on top of the pot enough for the bowl to hug the edge of the pot. We don’t want the bowl to fall into the water. Turn on the stove and set temperature to medium-high heat to boil the water. As the water is heating up, place the unsweetened chocolate (I did not chop my chocolate), 1 cup of the chocolate chips, and butter into the bowl. As it begins to melt, stir occasionally until smooth.

-Remove from microwave and set aside. Remove from heat and set aside.

-In a large bowl or stand mixer, whip eggs and sugar until thick and pale (roughly 2 minutes).

-Stir in the vanilla extract and chocolate mixture until well mixed.

-Add the flour, cocoa, baking power, and salt (slowly into the chocolate mixture and stir).

-Stir in the additional cup of chocolate chips.

-Cover dough for at least one hour or overnight.

Baking:

-Preheat oven to 350 degrees (175 degrees C)

-Roll chilled dough into 1 inch balls. Place them 2 inches apart on an ungreased cookie sheet.

-Bake for 9 to 11 minutes in the oven.

-Allow cookies to cool on baking sheet for 5 minutes before removing them onto a wire cooling rack.

 

Before I placed my balls of dough onto the cookie sheet, I used a baster brush and some oil to lightly coat my pan to avoid the bottoms of the cookies to stick. Cooking spray will work too. Though the recipe asked for the cookies to cool on the baking sheets before removing them onto a cooling rack, I used a non-stick spatula to loosen up the cookie from the pan once I removed the cookie sheet from the oven. Once the cookies were loosened from the sheet, I let them cool on the sheet for 5 minutes and transferred them over to the cooling rack.
